Slow Cooker Chicken and Wild Rice Soup

I adore my slow cooker. I call him Horatio and we are in love. Well, I’m not quite sure how he feels about me, but I really do love him. Even my hubby loves him. He saves us so much time and makes fabulous meals like this warm, hearty soup. What else can we ask for?

Slow Cooker Chicken and Wild Rice Soup

Serves 6
Prep Time 15 minutes
Cook Time 5 hours

INGREDIENTS

1 tsp Extra Virgin Olive Oil

1 Onion (chopped)

2 stalks Celery (chopped)

2 cups Carrots (chopped)

1 tbsp Garlic (chopped)

3/4 cup Wild Rice

12 ozs Chicken Breast

10 cups Chicken Broth

2 tsp Black Pepper

1 tsp Dried Thyme

1 1/2 tsps Herbes De Provence, Dried

1 tsp Garlic Powder

1 cup Unsweetened Almond Milk (or nonfat milk)


DIRECTIONS

  1. Saute onion, celery, carrots & garlic in 1 tsp olive oil in slow cooker for 5 minutes.

  2. Add wild rice through garlic powder. Stir, cover and cook on HIGH for 4 hours.

  3. Remove chicken, and shred it with 2 forks. Return to slow cooker. If soup too thick, add 1-2 cups water as desired, and cook for at least another hour.

  4. Add milk at least 20 minutes before serving to warm.

Green Salad (How about spinach, pomegranate seeds, asiago and walnuts?)
