Easy Breakfast Sandwich

Healthy, yummy, and super fast. A perfect breakfast for those beautiful Colorado mornings when the trails are calling!

INGREDIENTS:

  • English Muffins (I like Thomas Light Mulit-Grain because for 100 cal & 8 g Fiber they are delish!)

  • 1-2 Eggs

  • 1-2 slices Turkey Bacon, or Natural Ham,

  • Spinach or Kale Leaves

  • Fig Jam (or honey, or apple butter, or... OH, the possibilities!) 

1. Toast the English muffin to your liking. 
2. Using cooking spray, fry egg to your liking. We enjoy them "dead" :). Or I guess it's called "over hard" in a diner. Cook bacon or ham in same pan as egg.
3. Spread Fig Jam on muffin. Top with Egg, Spinach, and Bacon. Enjoy! Or wrap up to go!
