Apple Pie Muffins - High Altitude

I love cooking. But living so high in the mountains, baking can sometimes be challenging. I have learned that by adjusting butter and sugars, I can finally bake like a normal person! Ha!

This muffin I adapted from SMITTEN KITCHEN. They’re healthy, AND they taste just like warm, apple pie!

YES, PLEASE!

APPLE PIE MUFFINS

Makes 18 muffins

INGREDIENTS

6 Tbsp Butter
1/4 cup Brown Sugar. packed
1/2 cup (minus 1 Tbsp) Sugar
1 egg
1 cup Buttermilk - skim, or nonfat Greek Yogurt
1 1/2 cup White-Whole Wheat Flour
1/2 cup Flour
1 tsp Baking Soda
1 tsp Baking Powder
1/4 tsp Salt
1 Tbsp Cinnamon
2 Apples, peeled, coarsely chopped

DIRECTIONS

  1. Preheat oven to 450 degrees CONVECT BAKE.

  2. Cream butter and sugars together until lighter. Scrape down bowl.

  3. Add egg and mix well.

  4. Mix in buttermilk or yogurt.

  5. Add flour through cinnamon, and gently mix in.

  6. Add apples chunks., mix thoroughly.

  7. Divide batter among 18 muffin cups.

  8. Bake 8 minutes. Turn oven to 400 degrees and bake an additional 2-5 minutes until the muffin centers are set. Do not overcook.
