Chocolate Mousse for Kids

There are a lot of January birthdays in my son's class. Which means a lot of kids bring in cookies, cupcakes, donuts, and candy to celebrate.

So, when his birthday came around near the end of the month, he wanted something different. 

Chocolate mousse. 

Say what?!

My first thought was - I'm not making that for 25 kids! - but then he grinned at me, told me I was the most beautiful, and the best cook, and the best mom EVER... and PLEASE!

I have no problem saying no. Even to his adorable dimples. 

But I didn't. I said yes.

Why? Because mousse is actually super easy to make.

My only problem was how to serve it. I couldn't find pre-made chocolate cups. I didn't want to make any. And I didn't want to buy spoons. (Why? I don't know. Just didn't feel like it that day).

Then a phenonemon occurred. My brain whirred and creaked and exploded with an idea. 

I'd use mini ice-cream cones!

And voilà! Chocolate mousse to go!

Birthday Chocolate Mousse for Kids

2 cups Heavy Whipping Cream, chilled
1 tsp. Vanilla
3-1/2 ounces Semisweet Chocolate (I like Ghirardelli for this), cut to size of chocolate chips
Mini Ice-Cream Cones

1. In a large saucepan, bring 3/4 cup of cream slowly to a boil. Remove from heat. Add vanilla and chocolate, and whisk briskly until smooth. (This is why mine looks a bit chunky. I got tired of whisking.) Pour into mixing bowl, cover tightly and refrigerate approx. one hour.

2. Beat on low-medium speed until soft peaks form. 

3. Dollop into mini cones. And garnish with chocolate pieces. 

4. You're now the best EVER, too!
